Hi, I'm Devra Gartenstein with "Quirky Gourmet". Today I'm going to show you how to make a spinach and chickpea salad. Spinach and chickpeas are both used a lot in Mediterranean cooking so I'm going to use seasonings that go with it. I'm going to use some fresh mint that I just picked from my garden. You can use dried mint as well. I'm going to use some parsley. I'm using flat leaf Italian parsley. You can use curly leaf parsley if that's what you have. So here I have some chickpeas. I'm using canned chickpeas or you can use dried chickpeas and cook them for a couple hours. This is much easier, adding the chickpeas to the spinach. The spinach is already cleaned. I'm going to chop the parsley up small, chop the mint leaves. I'm using spearmint because peppermint is a little too sharp and strong for this. I don't ever really use it in savory food. Okay so I'm going to dress it with a little bit of lemon juice and then some olive oil and some black pepper. I'm going to toss it with a pair of tongs. It's much easier than a spoon because it can grip the spinach and turn it. And here you have a spinach and chickpea salad.
