Hi, I'm Devra Gartenstein with "Quirky Gourmet". Today, I'm going to show you how to make a spinach, lentil and feta salad and these are all ingredients that we use a lot in Mediterranean food. So I'm going to use Mediterranean seasonings with it. I have some fresh parsley and I have some fresh mint from my garden and I'm going to season it with some lemon as well. Here I have some crumbled feta, prewashed spinach and these are French lentils. I like them in salad recipes because they keep their shape unlike those gray green lentils that you use for soup, they turn into kind of a slurry so the lentils, put some fresh lemon juice on there and then the fresh herbs. I'm using Italian parsley, you can use curly leaf parsley if that's what you have. I just think the Italian parsley has a little more flavor and this is spearmint. Then I'm also going to add some olive oil, a little bit of salt and a little bit of black pepper. I'm going to toss it with a pair of tongs which is a good thing to use when you're handling spinach because you really have to grip it. And here you have a spinach, lentil and feta salad.
