Hi, I'm Devra Gartenstein with "Quirky Gourmet". Today, I'm going to show you how to make a spinach tamale. Now tamales use masa which is corn flour mixed with a little bit of limestone, so the limestone is alkaline and what that does is it actually makes the nutrients in the corn much more available to you. So here I have about half a cup of masa and I've boiled half a cup of water. I've got a little bit of olive oil and a little bit of salt in the water. I'm going to mix this with the masa. I'm going to make a dough. So here you have the tamale dough and I'm going to take some of this and I'm going to spread it on a corn husk. You can buy corn husks at any kind of Mexican grocery store, a lot of supermarkets have them as well and this will just take a second before it's cool enough to handle, especially if you're doing a small batch. If you're doing a big batch, it takes a little bit longer. I'm going to spread it out. Doing it wide is better than doing it long because you're going to close it around the filling. Here I have some spinach that I've pan fried with just a little bit of garlic, I'm putting a tablespoon in the middle and you're inclined to think that a little bit of filling is good or a lot of filling is even better, it's not so because if there's too much filling then the tamale doesn't close around the filling. So here is a chunk of cheese, jack cheese and then I just close this around here, shape it, press the ends together, just like that. And here you have a spinach and cheese tamale.
