Hi, my name's Bryan and I'm here from Trellis at the Heathman Hotel in Kirkland, Washington and we're going to show you how to eat a clam. So today we started out with Manila clams, we've basically purged the clams, cleaned them and we have to cook them first so I've put a little bit of white wine, a little bit of shallot, we've taken the shallot, the white wine and put our clams in just for about three to four minutes into the boiling liquid. We're going to finish this with just a touch of butter on top there, that's going to melt down and I want to add in just a little bit of lemon juice, you know lemon juice is just going to brighten up the flavors. Now, I know I said how to eat a clam but we're going to show you a little bit how to present them, we cooked them lightly in a little bit of white wine, a little bit of butter, a little bit of shallot and I'm going to serve these right in the shell and something important is all that beautiful broth that we have there in our pan, I'm going to ladle some of that broth into the dish. So now clams are ready and we need a bowl for the shells, a spoon for the broth and some of the clams are probably going to fall out of the shells so it's perfectly okay to use your fingers and remove those shells from the bowl, use the spoon and just see how beautifully those clams come right out of the shell and we can either take all our clams out at once or if you're like me I like to take and put a little bit of broth in there and just eat them one at a time, just delicious, that's how to eat a clam.
