Hi, I'm Bryan from Trellis at the Heathman Hotel in Kirkland, Washington and we're here today to show you how to make tomato soup from fresh tomatoes. Boy, when heirloom tomatoes are in season there's nothing better than the flavor when they come off the vine and the smell and the ripeness of a beautiful, beautiful, beautiful tomato. So what we're going to do is we're going to start out by just blanching and seeding our tomatoes and when I say blanch and seed we're basically just going to take boiling water, we're going to cut an x in the bottom of the tomato, put them in the boiling water for about one minute, remove them, put them in ice water and peel the skin. We then cut the tomatoes in half and squeeze out the seeds and we're ready for our soup. So we start out with our seeded tomatoes; are right here I have a few of our blanch tomatoes and what I've done already is I've taken and I've put a few in our blender and we're going to leave one whole here and just take this and we're just going to blend it very slowly and I recommend putting a top on the blender when you do this but if you're like me at home I can never find the one thing I need to complete a recipe so you can often use a plate to cover the top but I recommend the blender going very slowly. Okay, and I take our fresh tomatoes, our pure tomatoes pureed, we're just going to put those in our pot, put that on the stove and I'm looking to focus on the flavors of the tomato itself and not really take away from that so I'm going to sprinkle in a few shallots, a little bit of butter, a little salt, a little pepper and a couple whole spragues of fresh thyme and what we're going to do is we're just going to take and let that all come to a simmer on the stove. Now this total process on the stove will take maybe four to five minutes max. While we're doing that I'm going to dice a little bit of fresh tomato, I'm just going to take the outside of the tomato there and we're going to use this to garnish for our soup so that we have a little fresh flavor there. Okay, and I can smell the beautiful, beautiful, beautiful aromas of those tomatoes and the butter. We'll take our soup, this is delicious with the crusty bread, going to garnish that with a little bit of our diced fresh tomato, wipe the edge there and some fresh thyme. Here we have tomato soup from fresh tomatoes.
