Hi. I'm Bryan from Trellis at the Heathman Hotel in Kirkland, Washington, and I'm here to show you how to make a tomato pasta. Now, we're going to use cherry tomatoes today. And, they're really beautiful, and they have great flavor, but something that always get in the way is the skin. So, I'm going to show you a quick and easy way to remove the skin from the cherry tomatoes without a lot of work. Here I have a kitchen torch. Now, you can purchase these in most of kitchen cookware stores. Be careful when you're using it, because they are very hot. And I would use them in a ventilated area. What we want to do is just hit the cherry tomatoes with that torch very quickly. It's going to char them. We're going to then remove the skins from the tomatoes. And your guests are going to be so impressed that you peeled their cherry tomatoes. So, you just roll them around a little bit. Make sure you hit all sides with that torch, and that skin's going to peel right off for us. There we go. So, now, just set these aside, and we will use our peeled tomatoes later. I have a hot pan, and into our hot pan we're basically going to put a little olive oil, peeled garlic cloves. We want to infuse the oil with the garlic. So, we're just going to put our garlic into the oil, and the oil will pick up this really beautiful, beautiful, beautiful flavor. Going to grab a little fresh basil. We want to take just the leaves of the basil, and we're going to roll them together so I can slice them nice and thin. Bring a bowl over here for our pasta. Now, you don't want to burn the garlic, you just want to infuse the oil. And you can leave a couple of cloves in there, if you'd like, if you really like that garlic flavor, or you can remove them and put them to the side. Into the oil, we're going to add our basil and our cherry tomatoes, a little bit of salt, a little bit of pepper. Take and just--and toss our cherry tomatoes with our basil. I pre-blanched the pasta earlier so that it's all ready to toss into the oil and the tomatoes. We just want to heat it up. Bring all those beautiful flavors out together. Put our tomatoes, our pasta. We can top that with a few cloves of our garlic. And again, you can take and roast the garlic. Touch of olive oil, a little black pepper, and we can garnish with our basil. And that's how you make a quick cherry tomato pasta.
