Hi, I'm Brian from Trellis of the Heathman Hotel in Kirkland. And we are here to show you how to make blackberry infused vinegar. Now when blackberries are in season there's such an abundance on them in farms and in the grocery store. And we often eat them fresh, we use them for cobblers. But for salads there's nothing better then infusing vinegar. So we start out here I'm going to use frozen blackberries. These we just froze really quickly when they were fresh. I'm going to take my blackberries. Make sure everything is sterile. This is going to macerate in the refrigerator. So I'm going to soak these blackberries in vinegar and put them back into the fridge for about two weeks. Now I'm using a large container here. Not everyone wants to make this much vinegar at home. But we can do it in small containers. I put my blackberries. My vinegar and I'm going to use champagne vinegar for this. Just enough to cover the berries in vinegar. I'm going to take and top that, put it in the fridge. We use different sized containers. Here I have a quart jar. And here's a pint. And this is our finished blackberry vinegar. Now this has been two weeks in the refrigerator. The whole blackberries if you don't crush them or mash them, all those flavors will seep out into the vinegar stay pure and you'll have a nice clean vinegar at the end. Just so you can see what the finished product looks like, I'm going to take a little bit of our vinegar. Look at the beautiful color there. Put it on our plate. A little olive oil, a little salt, a little pepper. And you are ready to make a beautiful dressing.
