Hi. I'm Holly Hirshberg from dinnergarden.org. And today I'm in the mood for a tomato, cucumber and onion salad. OK. The first thing I'm going to do is put together my vinaigrette, and I want to do that first because it's going to be much easier to adjust my seasonings if I do it now than when I have my other ingredients in there. First, I'm going to add some red wine vinegar to my bowl. Then I'm going to add some extra virgin olive oil. I'm going to add a little salt and pepper to taste. Now, you can do this however you think you're going to like it. You can always add more. It's much easier to add more now than later. Because it's going to distribute much more evenly over your vegetables if you taste it first. Perfect. I'm going to start with cutting the tomatoes. These are roman tomatoes that look great. I'm going to cut off the stem part. That I'm going to put in my compost over here. I'm going to cut this in half. I'm just going to do it really fast. No need to spend a lot of time. Cut it into slices. This smells wonderful. I love tomatoes in the summer. Then I'm going to put them in the bowl over here with my dressing. I think I'll cut up one more tomato for this. You can do as many as you want, about, if the tomato's this size, about one tomato a person is going to be what you want, unless you're having this as your main course and then you might want to do two or three depending on how hungry you are. Going to add these into my dressing over there. My next ingredient is a cucumber, perfect for a hot summer night. Cold, refreshing, going to be great in my salad. In my salad for two here, I'm going to use about half of this cucumber. Cut off the end for my compost, just going to cut it in half. And then I'm going to cut it in slices, nice and easy, and fast. Because special salads, you never think of as a convenience food, but easy and fast to make, faster than most things you cook. Nothing is better than a garden cucumber, going to go ahead and add these to my bowl over here. OK. I'm going to pick up my cucumbers here. I just do everything with my hands. I can't be bothered with the fancy tools. Just going to put them right here in my bowl. It looks like I'm throwing in, but the end is going to be beautiful. My last ingredient, a red onion. Just using a little piece of it. Sometimes you think that you have to use the whole onion. You don't. You can cut up a piece, put it in a bag, put it in your fridge and it's going to save a long time. Don't feel like you have to make something that uses a whole onion. Onions are kind of spicy. You're just going to want a little to compliment your salad, not to overpower it. So, I cut a little piece of my onion, I'm going to put that in my bowl and that's the final ingredient. All that's left is to stir it up. It's all assembled, what's left is I need to stir it. It looks so good, it smells so good. I can't wait. If I wanted to make this a little heavier, at this point, I could add some cheese. But I'm happy with how it is. I'm just going to have it for dinner. It looks delicious. Let me try it. Mm..exactly how I wanted it to taste, fresh and light and perfect.
