Brighten up that box of brownie mix by turning it into the base of delicious butterscotch cheesecake. When it pops out of the oven, top it all off with some melted chocolate before indulging in that first decadent bite.

Hi, I'm Heather Bertinetti for eHow.com. Today, I'm going to make a brownie bottom butterscotch cheesecake. So let's get started. So here I just have the springform pan. It's a nine inch springform pan and I have just taken some store bought box brownie mix and put it in the bottom and baked it off. So that's going to be our base guys and now because we baked the cheesecake so it doesn't burn in a double water bath which I'll show you a little bit later, I line it with some aluminum foil just to make sure that no water will leak in the bottom. So let's get started with the filling. I have my cream cheese here. I'm going to add it in to my mixer and with the paddle attachment we're going to cream this up. We always start on the lowest setting and then we'll kick it up. Next we're going to slowly add our eggs in one at a time, incorporating after each egg. Okay, so at this point it's a good time to stop and scrape down the sides of the bowl. You always get some cream cheese because it's so sticky stuck on the sides of the bowl so it's important to stop and scrape as often as you can. Now continue to mix it. Next we're going to add one can of sweetened condensed milk and slowly cream that in. Then I have some melted butterscotch chips. We're going to put that in as well followed by a little bit of vanilla extract, great everything is all mixed up. We're going to release it from the bowl, give it a good scraping. Now we're going to pour it on top of our brownie, straight in the center and out. Fill it all the way up to the top, great everything is all in there. So now we're going to make our water bath so I grab a hotel pan, this is a full hotel pan and we're going to place it right in the center, be careful not to spill it over the side and then we're going to fill halfway up the sides with some water. Make sure your water is room temperature to warm. If it's not it causes the cheesecake to crack sometimes. And that's it. So I'm going to pop this in the oven and we'll check it after 45 minutes. Alright guys our cheesecake is finally done and I'm going to just show you how to release it really quick. So we just take the foil off the outside of this springform pan. Now before you just release this springform you're going to risk tearing up the cake, so you grab a knife and a little bit of hot water. Make sure you get your knife nice and hot, pull it down and then we just run it around the outside of the cheesecake. Great, so now remove it from the foil and you just discard the foil and release the springform and lift up. So now that we've released the cheesecake from the pan let's make it a little prettier. Let's have some melted chocolate. I'm just going to drizzle that right in the center. If you don't have a ladle you can use your rubber spatula as well and just start from the center and just work your way out. Be sure to get all the way around, beautiful. And that's it.
