Hey, I'm Louisa Shafia, here on eHow.com, and today I'm showing you how to pick out and prep Brussels sprouts. So Brussels sprouts are one of those vegetables that are around at the holiday season. They're really healthy. They can taste great if you pick out the right ones and you prep them the right way. So, I have a bunch of Brussels sprouts here and all of these are a nice green color. You don't see any brown spots on them. They all feel firm. There's no softness to them so they all look nice and ripe and ready to go. So all I'm going to do to prep them is just trim off this little end. I'm going to break off the outer leaves and then this little guy is ready to cook. Now when you cook them whole, you just want to carve a little X in the bottom and all this does is that allows the water or the oil that you're cooking the Brussels sprouts in to really seep all the way into the vegetable and cook it right to the core. So that's all you're going to do and from here you have a few different options. You can blanch them in some boiling water for a couple of minutes. You can steam them. You can coat them in olive oil, salt and pepper and roast them in the oven or you can pan sear them or do a little saute on the stove top. So that's it.
