Hi, I'm Camille Parker from camillesdish.com and today I'm going to show you how to make an Arugula Pasta Salad. You'll need your favorite short pasta, some fresh baby arugula, fresh tomatoes, Parmigiano-Reggiano cheese, toasted almonds, some lemons, olive oil, salt and pepper. So first all I'm going to do is cook off a little bit of my favorite short pasta, this one's Campanelle, for the bells in the bell towers of Italy. You could also use Gemelli or any other short pasta you want to use. I have just cooked it only halfway because we want the rest of the ingredients to sort of absorb into the pasta so I've left it a little bit, a little bit cool. I cooked it for, this one was only cooked for six minutes, ran it under cold water to just cool it a little bit, and then I'm going to add the rest of the ingredients, and when I dress it, the pasta itself is going to absorb some of the flavor of the dressing and it's going to be really delicious. So, to my lukewarm pasta I'm going to add some fresh tomatoes. Either diced or sliced in half, bite-sized, however works for you. I'm also going to add some lemon zest. So just get a zester, I like the microplane and you can just give it a little scrape like this and toss that in there. I'm going to go a little bit more, actually. Lemon, and arugula, and Parmigiano are wonderful together, so don't go easy on it. Also, what you're going to want to do is add a little bit of olive oil, which I tossed the pasta in olive oil when I first took it out of the water, just so it wouldn't stick together and then I could work with it more easily, so I've already done that, so I only need a teeny tiny bit more. So first I'm going to toss those together, I'm going to add a little bit of lemon juice as well, cause that's going to be my dressing, and some toasted almonds. Now you want to make sure that the almonds are toasted, always toast the nuts, it makes them way better. So now I'm just going to finish it with a little Parmigiano cheese and then I'm going to add in the arugula. Now this is a nice salad to take to a potluck or something of the sort, but you don't want to add the arugula at home, because by the time it gets to your party, it's going to be wilted and not as pretty. So even, you wanna, you want to add the arugula as close to the time of serving as possible. So what I would do if i was taking it away, put it in my container, and then I would just place the arugula on top without mixing it in, and when I arrived at the party I would mix it in at that point, so it stayed fresh and bright and crisp. So here we have all of the ingredients. All we have to do is add the fresh arugula. This is a wonderful summer pasta salad. It's just so nice with all the colors and all the bright flavors of summer, it's wonderful. Now you could also do this with another green if you wanted, when arugula isn't in season, you could use spinach or you could use any other type of light green that you like.
