Hi, this is Karen Bukolt with thatsvegetarian.com. Today I am going to show you how to make a chick pea and basil salad. The first thing you're going to want to do to make your chick pea and basil salad is get your ingredients ready. You have chick peas that you can get from a can or you can do yourself by taking them from dry, soaking them, and cooking them. We have sliced mushrooms, we have some chopped broccoli, and you can also use the stems, just chop them a little bit finer, chopped onions, some spicy chopped yellow peppers, diced, I should say, and then we have some thinly sliced red peppers, and Persian cucumbers also known as mini cucumbers. We're now going to put them into our bowl. OK, get it all in there. And now it is time to make the dressing. So we'll set this aside. The dressing is one cup of nonfat plain yogurt. You can use regular yogurt or you could use Greek yogurt or soy yogurt, your choice. We are going to put in half the juice of a lime and we have one clove of chopped garlic. We'll put in a cap full of apple cider vinegar. You can always add more vinegar, but once you put it in you can't take it out. A little bit of salt, a little bit of pepper. Got to back up to this pepper grinder. And then some chopped basil. I didn't chop it super fine because I'm going to use the immersion blender. So we'll put that in there. The handy dandy immersion blender. You can just stir it up, chop the basil finer, whatever you want, I just want to make it a little bit creamier. That's all we're going to do on that. Put it here to drip. OK, let's bring back our salad. I'll pour some of the dressing over it. OK. And stir. Just look at the creaminess and those yellow peppers are a bit spicy so the yogurt will help counteract the burning sensation you may feel on your lips from the hot peppers. And there you have your chick pea and basil salad with extra veggies in there as well.
