Hi, this is Karen Bukolt with Today I'm going to show you how to make a tomato, red pepper, chick pea, Italian salad. To make our tomato, red pepper, chick pea Italian salad, we're are using chick peas, a thinly sliced zucchini, thinly slice red pepper, thinly slice white onion, you can also use red onion, chopped tomatoes, you can also use grape tomatoes or cherry tomatoes, hearts of palm cut into chunks, and also some red kidney beans. Put them into our mixing bowl. To that we're going to add some Parmesan cheese. You can omit that if you want to make this a vegan recipe. And now we're going to make our dressing a little bit of a pesto. I'm using a chopper. I have some fresh basil leaves, garlic, some flat leaf Italian parsley. Now, with this I use a nice olive oil, and extra virgin because it's going to add a lot more flavor. Which it's important to have your finishing olive oils and your cooking olive oils. A couple of tablespoons in there, Balsamic vinegar. And now, time to chop. If you don't have a chopper, you'll just have to cut it up finely by hand. OK. Here we go. There we go and we'll just add it to our salad. If there's still some bigger pieces left in there, you can just pull them out and try chopping them again. And let's just mix it together. OK. We're now going to chill the salad for about a couple of hours in the fridge to let all the flavors come together.
