Hi, this is Karen Bukolt with Today I'm going to show you how to make a vegan edamame corn salad. We are using a shelled edamame, also known as soy beans. And to cook them, I just take the frozen edaamane, put them in a measuring cup, add boiling water to it and let it sit for about five minutes and that works. You can then add your frozen corn and let it sit for another minute, and then simply drain it. OK. We're going to put that into our mixing bowl. We are going to add our chopped red pepper, thinly sliced green onions, and chopped tomatoes. You can also use grape or cherry tomatoes if you'd like. To make our dressing, we're going to use about a teaspoon of rice wine vinegar, we have some sesame oil, about a teaspoon or two of that, chopped garlic, crushed ginger, about a teaspoon and a half of soy sauce, and we have wasabi used to taste about a half a teaspoon or so. Wasabi is a horseradish, so it is a bit spicy. And we're just going to add a little bit of sugar to taste. Going to shake up our dressing. OK. And before we put our dressing on, we have some soba noodles, whole wheat, that we're going to add to this. Going to add our dressing, toss until well coated, and that's it.
