Hi, this is Karen Bukolt with Today I'm going to show you how to make a red kidney bean salad. To make our red kidney bean salad, we have red kidney beans, we have some black eyed peas, chopped onion, you can use red, white, yellow, whatever you prefer. We have some roasted sweet potato, chopped tomatoes and some chopped green peppers. We're going to put this all in our bowl, to that we are going to add half of a chopped Swedish hot pepper. You could use a Serrano, you could use a Jalapeno, I'd be cautious on how much you use. I have some fresh cilantro here. I love using kitchen shears just to chop it in and now we're going to make our dressing. It doesn't need to be too exact. We are going to use some Sal E Pimenta avocado oil, put about two tablespoons in and of course, what is a dressing without some fresh garlic, chopped and then we are going to take a lime. We're going to rub it a little bit first. A little bit of pressure helps release some of the juices and we're going to squirt half of the lime juice in there. If you want it a little tangier, use a little bit more. Okay, we are going to shake it up, make sure it's closed, otherwise it will be all over your kitchen and pour it onto our salad, getting all the goodies, give it a quick toss. This is our red kidney bean salad. You can serve it with some tortillas, fresh baked or some tortilla chips and it makes a great afternoon salad.
