Hi, I'm Pace from Taste of Pace, and today we're going to make watermelon mint mozzarella skewers. You're going to need about a quarter pound of watermelon, 12 skewers soaked in liquid, fresh mint (about 12 leaves), and about 12 balls of ciliegine mozzarella. That just means cherry-sized mozzarella balls. Red wine vinegar, and extra virgin olive oil. Salt and pepper to taste. First, cut the watermelon into flat planks. Remove 12 mint leaves from the stems and set them aside. Turn on your grill to about medium high, then skewer the watermelon onto the wooden sticks. Grill on both sides until lightly charred. Then, take them off the grill and add one mint leaf onto the skewer, followed by a mozzarella ball. Then, drizzle them with red wine vinegar, extra virgin olive oil, and a little bit of salt and pepper to taste.
