Hi, I'm Camille Parker from Camillesdish.com, and today I'm going to show you how to make a celery and bean salad. We're going to use some white beans or cannellini beans, some fresh sliced celery, some grape tomatoes, a little parsley and some Pecorino Romano cheese. Then we're going to lightly dress it with olive oil and red wine vinegar. Now to make it simple, I've used white beans out of the can but you could easily use dry beans and cook them yourself. When I cook dry beans I like to use a little bit of garlic, whole garlic cloves as well as some sage leaves in the water to get a little extra flavor. If you don't have time for that, the canned beans are fine. Just rinse them off, get rid of the water and toss them in a bowl. Then I like to use the celery hearts, the entire thing, if you can. You can see that I've used also the leaves of the celery. Now some people think that the leaves are a little bit bitter but I like the flavor and they're very pretty and it makes it sort of frilly and nice. It gives it good texture. There's crunch but there's also some softness to it as well and to me it adds a little bit more, I like it quite a bit. Now for some color and a little bit more flavor, we have fresh tomatoes that I've just sliced down the middle. You can get whatever tomatoes are the best for you whichever ones look the nicest at the grocery store are the ones that I recommend you use and some parsley. Now the parsley you can see that I haven't minced either. I've just picked the leaves from the stems and I just like to add those whole because I really like the flavor of parsley. So, I want that to be whole component of this salad. Now I'm just going to dress the salad with a little olive oil, the good Italian way and a little bit of red wine vinegar, of course a little salt and a little bit of black pepper. Now I'm just going to toss that together and to finish we're just going to shave a little Pecorino Romano cheese. This is a salty cheese, it's a sheep's milk cheese so we're just going to finish it with a little white beans, a very classic combination is the Pecorino and the white beans, add a little celery for a crunch and some nice bright fresh tomatoes and there you have it.
