Hi, I'm Debra Gartenstein with Quirky Gourmet, and today I'm going to show you how to make a vegetarian potato salad and actually this is a vegan potato salad. It has no animal products at all. It has no mayonnaise, no egg, but it does have plenty of flavor. So I have, I used some red potatoes. I cut them up into one inch chunks and I boiled them on the stove for about five minutes, that's all it takes because if they're small enough they cook through pretty quickly. So and then I let them cool down, they're more or less room temperature now. So I'm going to add some chopped red onion and then I'm going to add some dried dill, some salt, some pepper, some red wine vinegar, some Dijon mustard and a little bit of olive oil. This is a very simple recipe but everything in it has plenty of flavor and it's a lovely vegetarian potato salad.
