Hi. I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a vegetarian bean pasta salad. Now, I'm using Israeli couscous, which is a kind of pasta, it's like little balls. You can really use any kind of pasta. Orzo is particularly nice. It's a Greek pasta that's kind of rice-like, but really anything, you know: elbows, butterflies... I chose this one because I like the way it looks with the chickpeas that I'm going to use. So, here I have the Israeli couscous, and I cooked it for about five minutes on the stove - just enough to get soft. The smaller the pasta, the quicker it cooks. So, then I'm going to add some chickpeas. I'm using canned chickpeas. I'm going to use some flat-leaf Italian parsley, which I think has more flavor than the curly parsley, although you really can use either, and I'm also using some chopped fresh mint from my garden. So I'm just going to chop this up coarsely. Okay, now I'm going to season with some olive oil and some fresh lemon juice, and some salt, and some pepper. And you notice that I don't measure the salt and pepper with a measuring spoon, but I do measure it against my hand, because it just gives me more control than just dumping it right in there. So, just mix this up. And here we have the vegetarian bean and pasta salad.
