Hi. I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a tomato and feta salad. This is a salad that goes really nicely with Greek food, because you use a lot of tomatoes. Also, feta cheese is nice salty and sharp tasting. And you use Greek seasonings with that, like dill and the feta cheese, which is a nice, sharp, pungent-tasting cheese. So, I'm using Roma tomatoes for this. You can use, really, any kind of tomatoes you want, and if you're anything like me and you don't sharpen your knives often enough, good to use a serrated knife. It's much more forgiving, especially with a tomato, because the outside can be kind of slippery. So I'm just cutting this in bite-sized pieces. I've got a little bit of crumbled feta cheese... and you really don't need much because the flavor is so strong. I'm also going to use a little bit of red onion, and some dried dill. You can use fresh dill as well, which is especially lovely. And then I'm going to add some flat leaf Italian parsley. I find it has a little more flavor than the curly parsley, but you can really use either. So I'm just coarsely chopping this. Fresh herbs always brightens things up a bit. And then I'm going to add some olive oil, and some red wine vinegar, and some salt, and a little bit of black pepper. Just mix that up together. It's very simple, it's very tasty. And here you have a tomato and feta salad.
