Hi, I'm Devra Gartenstein with Quirky Gourmet. Today, I'm going to show you how to make a fresh mozzarella and tomato salad. This is a quintessential summer salad when tomatoes are ripe and at their prime, and fresh basil is in season, it's abundant. So, it's a very simple salad that shows off the best of those lovely summer ingredients. So, I'm going to use these small mozzarella balls. They're called ovalini, and they are about half an ounce each. You can put them in just the way they are without even cutting them, but I like to cut them because when you're marinating something, the more surface area it has, the better its able to absorb the flavors that you put in. So, I'll just cut them in half here. And, if you're using the bigger mozzarella, they are like four ounce balls, you can just slice them up. I'm going to add some chopped tomato to that. And, these are beefsteak tomatoes, which are one of my favorite summer tomatoes. They just have a ton of flavor. And then, I'm also going to add some fresh basil. And, I'm going to cut it in ribbons, so, just thin slices here. And then, I'm going to add some olive oil, some balsamic vinegar - it's tart, and it's sweet, and a little bit of salt, and a little bit of pepper. Now, you want to make this salad pretty soon before you serve it, because when you salt the tomatoes, it draws the juice out of them. So, you don't want it to be just a puddle of juice with couple little tomato pieces in them. So, just mix it up. Very simple, unbelievably tasty. And, there you have the fresh mozzarella and tomato salad.
