on 12/21/2007 Good ideas on cooking a Roast...
Every one has there own, mine would be to add
onion and carrots to the bottom of pan
plus rub a little fresh garlic cloves on the meat...
But that is to everyones own taste...

on 6/11/2007 Ask butcher to season beef (no extra charge). Place beef on rack in pan (no oil, no water). DO NOT COVER. Cook at
375 IN PREHEATED OVEN for 1 hour ONLY. Turn off oven. Let sit in oven 3 hours - DO NOT OPEN DOOR. Then cook 1 hour at 300. Cut and serve.

on 11/22/2005 Leave roast out in room temperature for about 2-3 hours (depending on size) prior to cooking. This ensures that the meat is more evenly cooked to your taste instead of too well done on the outside and rare in the center.
