on 11/22/2005 One of my favorite ways of using tofu is in a delicious onion dip, which is normally made with higher-fat sour cream or mayonnaise. Buy soft 'silken' tofu, blend it for about 2-3 minutes in a blender or using a hand blender, add one packet of dry onion soup mix, 1 tbsp of lemon juice, stir everything with a fork and let it sit in the fridge for at least 20 minutes. Stir it before serving. Serve it with potato chips, raw veggies, breads, crackers, etc. Yum!

on 11/22/2005 When making scrambled tofu, you'll probably want to add a few things to enhance its flavor and appearance. A small amount of turmeric (not too much because it can stain plates and make things taste bitter) will make the tofu turn yellow as it cooks. Things like garlic salt and Bell's Seasoning will help it taste better. Chopping up an onion and letting it cook for a few minutes in the pan before adding the tofu also helps.

on 11/22/2005 You can substitute the hambuger in sloppy joe mixes with firm tofu. I perfer to freeze and then thaw it so it has a more meaty texture. You can also use the sloppy joe mix spead on noodles like macaroni. To add even more flavor to that you can place slices of soy cheeses (whatever kind you want) on the top of the noodles and sauce and heat until melted.
