on 10/18/2008 I love the approach giving substitutes! Definitely, looking into what raises blood sugar, and therefore, insulin production and resistance, is the main road to take towards wellness. However, calorie-counting can mislead you. Calories are not bad just like that, period. We need calories, but the right ones. It's better to eat a wild, mercury and PCB-free oily fish with more calories in it, than an almost no-calorie, conventionally grown tomato salad with a load of toxic residues from pesticieds and fertilizers, depleted of vitamins and minerals.
