on 10/21/2008 I enjoyed reading your article on how to roast peppers. I will have to try this. In NM we just had Green Chile Season and the supermarkets all do the roasting here. I love the aroma. Bacon and cheese sound good too futuremrsmoore. I will try that too! Thanks.

on 10/14/2008 I have often wondered how to do this. Your instructions are clear and concise. I think even I can do it, now. I like the flavor but it's not something my mother ever did, nor did any of my 4-H leaders, so I never learned how. Guess that proves even ol' dogs (I'm 61) can learn new tricks. Thanks!

on 10/14/2008 We cut a slit in ours de-seed them put a chunk of cheddar in the middle wrap bacon around the outside then put a toothpick through them and grill.....good!

on 10/13/2008 I love the taste of fire roasted peppers and tomatoes. I've seen people in cooking shows do it on the gas stove flame but not on the grill. I'll have to try this.

on 10/12/2008 Great instructions for roasting, but I freeze them with the skins on, they peel very well as they are thawing. I lay the peppers separately on a wax paper covered cookie sheet in the freezer and then when frozen, put them in a plastic zip loc bag. that way I can use one or many when i want.
