Our family likes a mild cheese sauce instead of the Hollandaise sauce - with a pinch of paprika sprinkled on top. Everything is kept hot and served on hot plates. In a restaurant we've had chives sprinkled on top, which was nice variation.

One user suggested melted cheddar cheese instead of hollandaise. While that sounds like a tasty dish, that is no longer a benedict. In my opinion, eggs benedict has three constants: poached eggs, English muffins, and hollandaise. The meat, however, can vary wildly. I have had turkey avocado benedict, spinach mushroom benedict, smoked salmon benedict, ahi tuna benedict, even filet mignon benedict!

Try using melted cheddar cheese rather than hollandaise sauce, and put two slices of bacon on the English muffin. It tastes better this way!

I always heat the muffins and ham separately while the eggs poach. I then assemble them. Tastes much better with the muffin toasted and the ham hot!
