I've managed and cooked at a health food restaruant as well as for large meditation courses. I'm sorry to report that raw wheat germ begins to go rancid with a few hours of milling. Within a few days, it's totally rancid. This means that when you buy it in the store, it's already gone. You can taste the bitter aftertaste. Even freezing does not stop rancidity, because it's the air exposure that's causing it.The only around this is to buy toasted wheat germ, as toasting stops the rancidity process. However, none of the toasted wheat germ on the market is organic. Best solution is to grind wheat fresh for your bread and cereal. Period.
