I love Zucchini bread and nuts in almost anything, so this sounds like the perfect combo. Can't wait to try it with my fresh zuch from my garden.

Zucchine bread is very popular in our house so I now double the recipe when I make it. My recipe is very similar to yours but I now have made a few alterations to make it healthier for my grandchildren who virtually inhale thick slices of it with cream cheese on it. I add a bit more cinnamon , not as much vanilla and I have replaced almost all the oil with half and half applesauce and yoghourt.To the almost one cup of unsweetened applesauce /yogourt I do add about one tablesppon of oil to make a full cup [remember this is for two loaves. I use pecans or pistachios as some are allergic to walnuts. [only one cup for the two loaves.]I cut the two loaves in half and freeze the four halves separately. Always something in the freezer for a snack, or whatever and same amount of dishes to make two as one. Just a thought for those who are trying to be health conscious even when baking....this bak

I use basically this same recipe to make "Apple Bread." Just substitute a couple of cups of peeled, cored and cubed Granny Smith apples for a great treat for your pals who reject the idea of "squash" for breakfast!

on 4/4/2008 Here's a really old tip: add a teaspoon of cocoa (the dry kind you use for baking). It will enhance the flavor of your zucchini.
