on 5/24/2008 Hey culinary person. Everybody loves it but you don't seem to be able to do math? ADD 8 PLUS 3. Anyways, if you are a real cook then you know as long as heat is being applied then food is still cooking. Either way, this reply is for everybody who reads your mistaken non mathematical, non cooking reply that was obviously made before you read the time of the eggs :D Have a great friggin day!
on 4/20/2008 Thank you, this is quicker than the the way I've been doing them, fill with cold water to one to two inches above eggs, bring to boil, cover, shut off heat and let sit for twenty minutes. The egg size matters but not so much. To test your eggs put in full pan of cold water. Those on the bottom are fresh and best used for breakfast, etc. Those that bounce up and down but stay at half mast or lower are great for hard boiled since they will peel easily and those that come to the top should be CAREFULLY sent to the garbage.
on 4/20/2008 I always want my eggs NOW so this is better than my way, covering with water one inch above eggs, bring to boil and cover shutting off heat and waiting 20 minutes. I do notice that the size matters some but not much. The older eggs will peel much easier and eggs can be tested for use. Put in cold water. If they float to the top get rid of them! If they bounce up and down about half way to the top they are good for hard boiled and will peel easily and if they lay on the bottom they are fresh.
on 4/18/2008 In my culinary arts classes we were taught that 12 to 14 minutes is the best time to get your eggs perfectly cooked. 12 minutes if you boil them for the whole time and 14 minutes if you bring the water to a boil and then set them aside for 14 minutes to cook in the hot water. I trust the experts in this and I don't think these eggs would cook enough to completely kill any bacteria existing in the eggs.
on 4/19/2008 I have never been good at boiled eggs...I tried this recipe several times I did increase cook time for larger eggs and now they come out perfect. Thank you for this article.
