on 2/21/2006 Before beating, separate the egg whites and yolks. Beat the egg whites until they gain some stiffness and fullness. Gently fold in the yolks without flattening the whites. Proceed to cook the mixture as directed and enjoy your nice, fluffy omelets!
on 11/22/2005 Saute a portion of your mixture, mushrooms, peppers, onions, etc. in the omlette pan. Then add a little butter & pour the beaten eggs directly onto the sauteed mixture. The remainder of the mixture & cheese can be added as the filling just before folding.
