Double Boiler Cooking

Double boiler cooking is a method used to heat or prepare foods that are too delicate to be in direct contact with cooking heat. A double boiler consists of two pans, one fitting inside the other. One can be created at home, if an actual double boiler is not available, by using a sauce pan and a metal bowl. Sauces, custards and puddings can be prepared--and even wax can be melted--using a double boiler.

Delicate sauces, such as Hollandaise, are best prepared in a double boiler. Double boilers should also be used when melting solid chocolate or wax. A double boiler is a pan designed for indirect cooking. It's actually two pans, with a larger pan on the bottom and a smaller pan that fits into the lower pan. Water is placed in the lower pan and brought to a simmering boil. The substance being cooked, warmed, or melted is placed into the upper pan and heated from the steam that rises from the lower pan.
