Your on crack. NEVER CUT THE MEAT TO TEST IT TO SEE IF IT'S DONE!!!! Either use a thermometer or practice. When you cut the meat open like that all the juices inside drain out. and the meat will be over cooked and dry. Follow all directions above but cook fat side up for about 1 hour 30 minutes on low to medium heat. (about 1 1/2 to 2 pound roast) Also you have to learn how to slice it correctly across the grain. Usually start at the round shoulder. By the way. I am a chef at the Playboy Mansion I know what I am talking about.
