Usually the beer making kit will come with a capping device which will tighten the caps over the top of the bottle. Then you just use a bottle opener like any other beer to open it (its not a twist off). There are many, many varieties of homemade beer you can make depending on the ingredients. I have made pale ales that taste similar to many of the local brewery beers I have tried. If you brew the beer correctly, it should taste just as good as any beer on the market or better.
