: Basically, if you're buying fish from a supermarket, and if you want to prepare it raw, it should be marked as sashimi grade. I bought an Ahi tuna steak, sashimi grade from a possibly local supermarket (Trader Joe's), for about sixteen dollars. Nevertheless, it was delicious and worth every penny.
When searing fish, there are only a few things to keep in mind. Get the cooking vessel hot so that the oil used is smoking. Make sure you monitor the charring level, so that it is how you like it. It's pretty free-form.
