Making a tasty and easy meal does not have to be difficult. Relieve some stress by throwing together a light and easy meal after a long day of work. Although fast food might sound like the easiest option, it is definitely not. A few simple ideas will have your dinner on the table in no time at all.
Serve salad as a quick meal option when you are in a hurry. Grab a head of lettuce or bag of lettuce and mix in your favorite healthy foods. Throw in some pre-cooked chicken or beef fajita strips, vegetables, your favorite dressing and some cheese.
For a Mexican-style salad, toss in some black beans, fresh corn, chipotle peppers, sour cream and Southwest-style dressing.
Start with a tortilla, such as whole wheat, low carb or plain flour tortillas. Roll tasty ingredients in the tortilla, such as ham, turkey, roast beef, cheese, fajita meat, lettuce, tomatoes, mayonnaise, peppers and special sauces. Heat your wrap or enjoy it cold.
Individually packaged frozen tilapia and salmon fillets are perfect for a quick, light meal. Place the fish fillets on a baking sheet with a pat of butter on top, if desired, and bake for according to the package recommendation. Sprinkle garlic powder, paprika or other seasonings on the fish before baking. While the fish is baking, steam frozen vegetables in a small pot on the stove. Frozen vegetables take a small amount of water and cook in less than 10 minutes. Add a small amount of garlic butter to the steamed vegetables for added flavor. By the time your fish is done, you will have healthy steamed vegetables to serve with it.
Combine one pound of cooked ground beef with a little chili powder, a can of beef broth, a small can of tomato sauce, a can of corn and a can black beans in a large saucepan. Heat the chili to boiling and let simmer for about 20 minutes or until thick. Add sour cream and green onions, if desired, and enjoy. You can also add cheese and serve with crackers or corn bread.
Mix a can of cooked chicken, one tbsp. taco seasoning, chicken broth, a can of white beans and about a 1/2 cup of green salsa in a microwave-safe bowl or in a saucepan. Heat the soup in the microwave for one minute at a time until hot or in a saucepan on medium heat until hot. Enjoy the soup with crackers.
