A California roll is often the gateway dish first tasted by future sushi fans. The roll was invented in Los Angeles by a Japanese chef hoping to introduce skeptical Americans to sushi. The widespread popularity of sushi in California led to the opening of the California Sushi Academy in Los Angeles in 1998, where sushi chefs are trained and certified, and hundreds of restaurants can now be found across the state.     • Maki Maki offers different sushi rolls, such as popcorn lobster, asparagus salmon and godzilla. The owners strive to provide a comfortable atmosphere with an expansive menu beyond sushi for every customer. Sashimi entrees include Cajun seared tuna, Japanese mackerel, squid and sea urchin and are served with miso soup. Other menu options include sukiyaki, noodles, tempura, steak, sea bass, chicken, short ribs and Alaskan halibut.     • Sushi Ran, located in Sausalito, employs a sushi manager and specializes in "creative and classic Japanese sushi." Sushi options include omakase seasonal tastings, maki such as creamy scallop and spicy tuna, or sashimi featuring tuna, yellowtail, whitefish, shellfish and several others. Additional menu categories include soup, earth, land, sea, salads and tempura. Open daily for dinner and on weekdays for lunch, Sushi Ran also offers sushi platters for takeout or catering.

    Sushi Go 55

    • Sushi Go 55 features traditional sushi in a setting intended to feel "as if you stepped into a sushi bar in Japan," according to the restaurant's website. The sushi bar includes yellowtail, red snapper and octopus fresh from Japan. It also offers live shellfish, and rolls such as rainbow, dragon, firefly and spider. Dinner entrees include nigiri sushi, sushi box, tempura shrimp, broiled salmon and deep-fried oysters. Sushi Go 55, located near Union Station in L.A., is open for lunch and dinner and offers happy hour specials weekdays from 5:30 to 7 p.m.

    Ono Sushi

    • An extensive menu of sashimi, nigiri, rolls and combo platters can be found in San Diego at Ono Sushi.
