What Can You Use Instead of Eggs in Brownie Mix?
You may want to substitute for eggs when making brownies from a mix because of allergies, dietary restrictions, lower fat and fewer calories -- or simply to save a trip to the grocery store. Several different ingredients can be used in place of eggs, including everything from packaged egg substitutes to flax meal, gelatin, cornstarch and bananas. Does this Spark an idea?

Fat-free egg substitute

If you don't need to avoid eggs altogether, but simply want to reduce fat and calories, consider a fat- and cholesterol-free egg substitute or egg whites. Use 1/2 cup of egg substitute or 3 egg whites to replace two whole eggs, which may give your brownies a more cake-like texture. While many egg substitutes are made from real eggs, egg-free vegan substitutes are also available.
Flax meal

Flax meal can substitute for eggs in baking brownies. Make it by grinding flax seed in a coffee grinder or purchase it already ground. Replace each egg with 2 tablespoons of flax meal plus 1/8 teaspoon of baking powder and 3 tablespoons of water.

Gelatin

Gelatin is another good egg substitute. For each egg, dissolve a tablespoon of unflavored gelatin in a tablespoon of cold water, then add 2 tablespoon of boiling water and beat until frothy.
Cornstarch

Simply replace each egg with a tablespoon of cornstarch and 3 tablespoons of water.
Banana

Mashed bananas can replace eggs in brownies, but may add a bit of a banana flavor. Replace each egg with 1/2 of a mashed ripe banana and add 1/4 teaspoon of baking powder.
Silken Tofu

Replace each egg with 1/4 cup of silken tofu.
