The party is over and you're left with a pile of shredded pork. Before sentencing yourself to a month of eating only shredded pork or tossing the meat in the trash, a few ideas can help you use leftover shredded pork in many delicious ways.
Shredded pork doused in a layer of sticky, sweet barbecue sauce is a staple of the summer time. Put that leftover shredded pork to good use by mixing it with a barbecue sauce of your choice. Scoop a hearty portion of the flavorful meat on a roll to make a pulled pork sandwich. For some extra flavor and texture, top the pulled pork with a layer of crunchy cole slaw. Serve the sandwich with some chips and pickles for a tasty leftover feast.
While empanadas are traditionally a South American treat, give them an American spin by stuffing them with leftover shredded pork. Mix the shredded pork in sauce, such as mole or barbecue, or with vegetables, like grilled peppers and onions, to add more flavor. Place the pork mixture in dough or pre-made pie crust, then deep-fry the empanadas until the crust is golden brown. For healthier, heart-friendly empanadas, bake them in the oven.
Leave behind traditional pizza toppings like cheese or pepperoni in favor of a saucy pulled pork pizza. Roll out a regular pizza crust, then top it with a mouth-watering layer of leftover shredded pork. Drizzle the pork with barbecue sauce.
