Eye round steak is a lean cut of beef that comes from a well-exercised part of the cow. Because the steak is so lean, it is not naturally tender. Therefore, the eye round should be cooked over low heat for a long period of time for the tenderness to develop as the muscle tissue breaks down.   1. Tangy

    • Use citrus to develop and season the flavor of eye round steak. For every 1 lb. of eye round steak, place the juice from one lime or lemon into a sealable plastic bag. Add 1/2 tsp. of ground coriander, garlic powder and cumin to the mix. Finally, finish the marinade with a 1/4 tsp. of black pepper. Seal the bag, shake it up and then place your eye round steaks into the bag and reseal. Rotate the bag several times so the steaks become covered in the marinade. Place the bag in the refrigerator for 30 minutes to 1 hour until you are ready to cook. This recipe can be easily doubled or tripled for parties. Simply keep the ratios of one lime or lemon to a 1/2 tsp. of ground coriander, garlic powder and cumin, to 1/2 tsp. of ground black pepper.

    Bacon and Salt Eye Round Steak

    • Mix the flavors of bacon and several salty items to season your eye round steaks. In a sealable bag, place a tsp. of garlic salt, seasoning salt and 2 tbsp. of Worcestershire sauce for each 1 lb. of eye round steak. Next, wrap a piece of raw bacon around the steak and secure with a toothpick. Place the steak in the bag and rotate so the steak becomes well-seasoned. Place in the refrigerator for 30 minutes to 1 hour before cooking. The salt will help tenderize the eye round steak.

    Red Wine Marinade

    • People often like to enjoy a glass of red wine with their steak. Therefore, infuse the flavors of red wine into your eye round steak. In a sealable bag, combine 1 cup of red wine, 1 cup olive oil, 8 smashed cloves of garlic, 10 peppercorns, and two stalks of fresh rosemary for every 2 lbs. of eye round steak you place in the bag. Shake and place the bag in the refrigerator for 30 minutes to 1 hour before cooking. If you wish to lessen the garlic flavor, simply remove some of the garlic cloves. Additionally, if you wish to lessen the spice, reduce the number of peppercorns. Remember that you are merely using the wine to flavor the steak. Therefore, use a cheaper table wine and save the nice bottle to drink alongside dinner.

    Asian Eye Round Steaks

    • If you are serving an Asian-style meal, you can flavor your eye round steak with some simple Asian flavors. In a sealable bag, combine one can of beef broth (14 oz.) with 2 tbsp. of lemon juice, 2 tbsp. of soy sauce, 1/2 tbsp. of garlic powder, 1/4 tbsp. of black pepper and 1/4 tbsp. of fresh ground ginger for every 24 oz. or 1 1/2 lbs. of eye round steak in a sealable bag. Rotate until the steaks are well-dressed. Place in the refrigerator for 30 minutes to 1 hour before cooking. If you wish, you can also replace the lemon juice with lime juice in the recipe.
