Ingredients for the Bread

The amounts listed here are for one loaf in a 9-by-5-inch pan; you can alter them according to the size you want:
1 cup quick cooking rolled oats
1 1/2 cups whole wheat flour
3/4 cup all purpose flour
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
Salt (to taste)
1/2 cup canola/vegetable oil
2 or 3 eggs
1 cup mashed bananas
1 1/2 cups blueberries
Initial preparations

Preheat the oven to 350 degrees F. or 175 degrees C. Grease the pan and set it aside.
Lightly dust half of the blueberries with a little flour, mash the bananas separately and set them aside.
In a mixing bowl, sift the two flours, salt, baking powder and soda and mix in the non-dusted blueberries.

In a separate bowl, beat the sugar and oil together, gradually adding the eggs till the mixture turns somewhat fluffy and its color lightens.
Add the egg mix to the dry mixture, gradually stirring and folding it in and then mix well. Add the mashed bananas and mix well.
Pour half the batter in the pan and randomly sprinkle the previously flour-dusted blueberries. Pour the rest of the batter on it and shake the pan a bit to smooth the whole mixture.
Baking

Bake the mix in the pre-heated oven for 40 to 50 minutes. To check it if it's ready, insert a toothpick in the center and if it comes out clean, the bread is cooked through. Let it remain in the pan for 10 minutes and then remove it and put it on a wire rack to cool. Before serving, wrap the loaf in foil and refrigerate it for some time.
