Hot Louisiana Smoked Sausage can be cooked, sliced and poked with toothpicks for an easy appetizer, or you can dress it up by stuffing it into mushrooms. Hot Louisiana Smoked Sausage and potatoes are good ingredients to make quesadillas. Remove the casing, break up 1 lb. of sausage and fry until it is browned. Drain the fat and place the sausage in a bowl that has been lined with paper towel. Add 1 tbsp. vegetable oil to the pan and warm over medium heat. Peel and dice one potato and add it to the pan along with ½ tsp. paprika and ¼ tsp. salt. Stir occasionally until tender. On a baking sheet, lay four tortillas on top of each other and put half the sausage and potatoes on top, spreading it out to the outer edges of the tortillas. Top with 1/8 cup chopped red onion, ¼ cup cilantro leaves and 1 cup shredded Monterey Jack cheese. Cover with four more tortillas. Repeat this step using another set of eight tortillas. Brush the top with 1 tsp. vegetable oil and sprinkle lightly with paprika. Place the baking sheet in the oven at 425 degrees for approximately five minutes or until the cheese is melted. Cut into wedges and serve warm with sour cream.

For a zesty wake-up call in the morning serve, sliced Hot Louisiana Smoked Sausage on a cheese-covered buttermilk biscuit. These tasty sausages also go nicely with eggs. Try dicing them in an omelet or turn them into breakfast burritos. Remove the casing from 1/2 lb. sausage and fry in a pan with 1 cup chopped onion and 1/2 cup green or red bell peppers. Crumble the meat as it is cooking. When the meat is completely cooked and the vegetables are tender, drain off the fat. In a medium-size bowl, scramble 10 large eggs with 1/3 cup milk. Add salt and pepper to taste and pour over the meat mixture in the frying pan. Scramble the eggs by scraping the pan as the eggs cook. When the eggs are thoroughly cooked, lay out six 10-inch flour tortillas and spoon the sausage and egg mixture evenly in the middle of each one. Sprinkle with shredded cheddar cheese. Roll each tortilla and place in a baking dish. Bake at 200 degrees for approximately 15 minutes or until the cheese melts.

Hot Louisiana smoked sausage is just right when making jambalaya or a skillet. A sausage and vegetable skillet can be made by placing 3 tbsp. vegetable oil in a 12-inch fry pan over medium-high heat. Peel and dice two medium-sized potatoes and add to the pan. Add 1/2 cup finely chopped onion and 1/2 cup chopped green bell pepper. Stir the mixture occasionally until the potatoes are tender. Add 2 cups broccoli and the desired amount of sausage in the pan and cook approximately 15 minutes or until the broccoli is tender and the sausage is heated through. Sprinkle 2 cups shredded cheddar cheese over the top and cover the pan until the cheese melts. Serve warm with fresh bread.
