Fondant is a type of candy made from a thick paste, but it is more commonly known in its capacity as frosting. Like other types of fondant, marshmallow fondant, also called "MMF," can be rolled into a sheet, then draped over a cake or other baked good for a perfectly smooth frosted surface. Fondant does such a good job of covering cakes that it actually locks in freshness, helping them last longer. Does this Spark an idea?

  1. Cake Frosting

    • The most common use for marshmallow fondant is as a cake frosting. Less heavy than its sugar-based counterpart, marshmallow fondant has a softer, less-sweet texture while providing the same flawless surface. Extremely versatile, marshmallow fondant can be dyed, rolled, and decorated just like normal fondant, while providing a fluffier texture and a taste that many prefer. However, baker beware: making marshmallow fondant for cake decorating can be an intense workout, as the resistant texture of the marshmallows makes it tricky to roll into large, cake-covering circles.

    Cookie Decorating

    • Marshmallow fondant for cookie decorating is made similarly to that for cake decorating, but it is less labor-intensive because the fluffy, gummy frosting is rolled into much smaller pieces. Marshmallow fondant is a fun alternative to buttercream or other popular frostings for sugar cookies; simply roll out the fondant, cut it with the same cookie cutters used to shape the cookies themselves, and you have instant cookie coverage without the mess. Lay the fondant on warm cookies, or use piping gel to attach the fondant to cooled cookies.

    Decorations

    • Marshmallow fondant can also be used to create small decorations, like flowers or figurines, to decorate the top of a cake, whether the cake is marshmallow-fondant "frosted" or not. Figurines can be shaped as they would be from modeling clay, for a three-dimensional look, creating everything from ballerinas to train conductors to a tiny bride and groom. They can also be cut out from a flat piece of marshmallow fondant, using a cookie cutter. Rosettes can be easily formed by rolling out a thin strip of marshmallow fondant, then rolling it up like a cinnamon roll and pinching the bottom.

    Candy

    • Marshmallow fondant is, first and foremost, a type of candy, although it is rarely used for that purpose. Make a treat from marshmallow fondant, rolled and cut it into shaped candy pieces. This treat should be prepared just prior to being served, as it will get dry and tough if you make it too far in advance; it does not respond well to humidity. Cut the fondant into the shape of bunny rabbits for Easter, flags for the Fourth of July, or stars for a back-to-school celebration.
