There quite a few dishes that can be made using ground beef, from simple go-to meals to elaborate. One idea when trying to decide how to use ground beef is to consider what spices pair well with the meat. Basil, chili powder, curry, garlic, oregano, thyme, ginger, allspice and garlic are good spices to use with ground beef.
Brown 2 lb. ground beef with 1 large onion, chopped and 2 chopped jalapeno peppers (seeds removed). Season with 1/4 tsp. garlic salt and set the beef mixture aside. Fry 12 (8-inch) tortillas in a skillet with 2 tsp. vegetable oil. Once fried, spread meat mixture and 8 oz. Colby cheese between each tortilla. Roll each tortilla up and arrange them next to each other in a 9 by 13-inch baking dish. Pour 2 (19 oz.) cans of enchilada sauce over the enchiladas and top with 2 oz. shredded Colby cheese. Bake at 350 degrees for 20 to 30 minutes.
Add 2 lb. ground beef and 3/4 cup chopped onion to a large saucepan and sauté for about 10 minutes, or until the meat is browned. Mix in 1 tsp. black pepper, 1 tsp. garlic salt, 2 1/2 cups tomato sauce, 10 oz. salsa, 4 tbsp. chili seasoning mix, 1 (15 oz.) can light red kidney beans, and 1 (15 oz.) dark red kidney beans with the ground beef. Stir well to mix in all the spices, then turn the heat on low and simmer for an hour. Serve with tortilla chips and shredded cheddar cheese.
Spaghetti Sauce and Meatballs
Start by making the sauce. Saute 1 cup chopped onion, 4 cloves minced garlic and ¼ cup olive oil until the onion is translucent. Add 2 (28 oz.) cans whole tomatoes, 2 ½ tsp. salt, 1 tsp. sugar and 1 bay leaf and stir well. Simmer over medium heat for an hour. While the sauce is simmering, add 1 lb. ground beef, 1 cup breadcrumbs, 1 ½ tbsp. dried parsley, 2 tbsp. grated Parmesan cheese, ¼ tsp. black pepper, 1/8 tsp. garlic powder and 1 beaten egg to a large bowl. Mix well and make 12 balls out of the meat mixture. After the sauce has simmered for an hour, stir in 1 (6 oz.) can tomato paste, ¾ tsp. black pepper and ¾ tsp. dried basil. Add the meatballs and simmer on low for 30 minutes before serving.
In a bowl mix 2 lb. ground beef, 1 (10.75 oz.) can condensed tomato soup, 1 finely diced onion, 1 cup rolled oats, 2 beaten eggs, 2 tbsp. steak sauce, ½ cup ketchup and 2 ½ tbsp. mustard thoroughly. Add to a loaf pan and pat the mixture in to fill the entire pan and smooth out the top of the meatloaf. Bake at 350 degrees for 1 hour.
