Packing a successful picnic is not as difficult as you may think.

Springtime is a time of sunshine, leisurely afternoon activities and memorable outdoor meals. A sure way to enjoy these sunnier months is to plan a picnic. Swap out the traditional starchy, easy-to-spoil foods with more healthful options.   1. Appetizers

    • Planning to bring appropriate appetizers, such as fresh fruits and vegetables, will start your picnic off on the right foot. Celery with peanut butter, or corn chips with salsa or bean dip are perfect options that will not spoil easily and are low on calories and fat. If you prefer to bypass the dips, you can serve a delicious variety of broccoli, cauliflower and carrots. Serving goat cheese and wine crackers is a delicious start to any picnic.

    Sides

    • Traditional potato salads will end up weighing you down and spoiling your afternoon activities. Swap out those baking potatoes for sweet potatoes, and you will not only add delicious flavor, but also beta-carotene as well as valuable antioxidants. Sweet potato salad can be made easily by peeling the potato, then cutting it into chunks. Toss with a tablespoon of orange juice and a dash of cinnamon or brown sugar.

    Main Courses

    • When considering your main courses, remember that traditional meat proteins will spoil quickly. Most meat dishes are warm, which will end up melting any ice packs you have to keep your cold dishes at optimal temperature. Instead, opt for a grain protein such as quinoa. Adding chickpeas or your favorite bean to a quinoa blend will complete the meal requirements for protein.

    • Quenching your thirst with sugary drinks is not suggested when you are out in the sun. Pack plenty of water, which can be frozen the night before to serve as ice packs for the rest of your picnic meal. Iced tea, flavored water, juice-based smoothies and natural fruit drinks will keep with your healthy picnic theme.

    Desserts

    • A light and delicious cake is perfect for a picnic, and any leftover fruit from your appetizers or snacks can be used as a topping. Any toppings that need to be served cold can be frozen ahead of time to help act as an ice pack, and they will be thawed just in time for dessert. Other great dessert options are sliced watermelon, cantaloupe and strawberries. Drizzle them with agave nectar or honey for added sweetness.
