Breakfast burritos usually contain scrambled eggs. Burritos are popular throughout the Americas, and there is no end to the possibilities when it comes to ingredients contained by the warm tortilla wrapping. Eggs can be scrambled and rolled inside of large flour tortillas, along with beans, potatoes, salsa and other items of choice, to create a stuffed burrito for breakfast. Using egg substitute and vegetables instead of meat and cheese cuts down on the fat content.

Runny eggs are perfect for huevos rancheros. Huevos rancheros consist of warm corn tortillas covered in fried eggs (usually with a runny yolk) and hot salsa. The dish is served with the tortillas flat on the plate and, often, with other items like black beans on the side. This meal is enjoyed for breakfast but sometimes offered throughout the day at Mexican restaurants.

Eggs baked on top of tortillas creates a savory casserole. There are many variations to the Mexican egg bake dish, and any number of preferred ingredients can be used to prepare it. A basic recipe consists of raw eggs stirred together with cheese, onions and sausage all baked in the oven for 30 minutes on top of a flat layer of corn tortillas. Jalapeno peppers add a spicy kick to the dish. Sauteed mushrooms and other vegetables add variety. The result is a hot casserole that can be cut into squares and served anytime during the day.

Migas is eggs scrambled with tortillas. Migas is a Tex-Mex meal consisting of eggs scrambled together with various flavorful ingredients and herbs along with torn chunks of corn tortillas in a skillet. Beat together eggs, chunky salsa and a bit of water, and set aside. Heat butter or oil in the skillet, and cook the corn tortilla pieces with onions and any other desired vegetables. When the tortilla chunks are soft and the onions transparent, add the egg mixture and stir until the eggs are done. Serve this dish with flour tortillas on the side.
