The Basics
-
Lightly spray the tinfoil with a nonstick cooking spray or brush with olive oil. This will prevent your meal from sticking to the sides of the tinfoil. Use heavy duty tinfoil that is 12 inches wide and tear off a piece that is approximately 18 inches long. Lay out your tin foil and begin to place your ingredients in the center of the package. Place your meat at the bottom of the packet as it takes longer to cook. Some items require precooking such as noodles; you may also wish to precook items such as carrots, which may take too long to cook in foil. Be careful not to add too many ingredients, as over packing the foil may prevent it from sealing properly. Fold your edges over, creating a pocket with a tight seal around your food.
Chicken Curry Packet
-
Place chicken, carrots and zucchini at the center of the foil and then add a teaspoon of water. Mix together a 1/2 cup of chutney, 1 teaspoon of curry powder and 1 teaspoon of butter. Spread the mixture on top of the chicken. Sprinkle coconut and chopped nuts on top of the contents of the packet and begin to fold the tinfoil creating a seal around the mixture. Create one foil packet for every serving required. Bake in a 500 degree Fahrenheit oven for approximately 15 minutes.

Salmon and Herb
-
Drizzle olive oil on the tinfoil and lay two salmon steaks down. Drizzle 2 teaspoons of balsamic vinegar on top. Add two chopped green onions and sprinkle your favorite herbs on top of the salmon. Some suggested herbs include basil, oregano and lemon grass. Add a dash of salt and some black pepper. Fold your tinfoil and then start up the barbecue. Grill on the top grill, using low heat for approximately eight minutes. It is important not to overcook this meal.
Campfire Pork Tenderloin
-
Lightly drizzle olive oil onto tinfoil and place a pork tenderloin in the center, lengthwise. Cut potatoes into 1/4-inch slices and place them on and around the meat. Add a variety of vegetables on top, sprinkling with garlic, salt and pepper. You can experiment with other spices or try adding Italian dressing and vegetables such as zucchini. Fold your foil over, creating a sealed packet and place on the hot coals for approximately 60 to 90 minutes.
