The combination of their diminutive size and the flavor of their tender dark meat make chicken drumsticks a dynamic ingredient to make a host of different recipes. Dress them up in a sweet and tangy sauce or slow cook them with other ingredients to make a hearty meal. However you decide to cook them, drumsticks can put a smile on the faces of your dinner guests. Does this Spark an idea?

  1. Casserole

    • A Spanish dish, paella, contains rice, bell peppers, herbs and tomatoes. The beauty of a paella recipe is adapting it to suit your tastes. Adding some mushrooms, shrimp or even a few asparagus spears can round out the recipe. Make your paella by sauteing drumsticks in olive oil over medium heat until they are brown. Add your vegetables and continue to saute until the are barely tender. Pour in chicken stock, add medium grained rice and cover and cook until the rice is tender, about 20 to 30 minutes depending on the quantity of the rice. During the last few minutes, turn the heat up to create a caramelized crust over the vegetables and the rice.

    Entree

    • Chicken drumsticks make for an easy entree to serve with baked beans, corn on the cob and stewed greens. Coat a batch of drumsticks in a cornmeal batter for a Southern inspired meal. Mix together 1/4 cup each of mayo and whole grain mustard with a dash of Worcestershire sauce. Mix together to combine. In another bowl measure 3/4 cup of yellow cornmeal along with 2 tbsp. of dried parsley leaves. Dip 1 lb. of drumsticks in the mayo mixture and then roll in the cornmeal mixture. Place the chicken in a glass baking dish and bake at 400 degree for 30 minutes, or until completely cooked.

    Appetizer

    • Like chicken wings, small drumsticks coated with a tangy barbecue sauce can make a messy but delicious appetizer. Serve these drumsticks during a football game or tailgating party and your guests will thank you for it. Pour about 10 to 12 oz. of your favorite barbecue sauce in a gallon-sized freezer bag. Add a dozen drumsticks into the bag and seal. Move the drumsticks around in the bag to get each one coated in the sauce. Refrigerate overnight. Stoke up a grill to medium-high heat and place the chicken on the grill. Cover and let the drumsticks cook for four minutes before turning. Keep turning the meat every few minutes, and brush additional sauce to add flavor. After 20 minutes, insert a thermometer in the thickest part of a drumstick for an internal temperature of 160 degrees.

    Stew

    • If you don't have time to prepare an lengthy dinner, try making a slow-cooker meal with drumsticks to enjoy as soon as you get home for work. Chicken cacciatore, an Italian stew-like dish, is easy to throw together. Chop up a yellow and green bell pepper, a large onion, an 8 oz. package of mushrooms and several cloves of garlic. Put these ingredients in a large crock pot and add 1 lb. of drumsticks and a 28 oz. can of crushed tomatoes. Sprinkle in dried oregano, thyme, sage and basil. Cook on high for seven hours or until meat is cooked through. Add several tbsp. of brown sugar to sweeten the sauce according to taste. Serve with rice.
