Weekend meals should be relaxing and calm after a turbulent work week.

The weekend is the time for enjoying downtime and unwinding from a hectic week. It is difficult sitting down for a calm meal Monday through Friday. However, the weekends call for taking a personal time out. Organize your weekend meals and gather ideas for them during the week for prepping ease on the weekends. Add this to my Recipe Box.

  1. Friday Night Dinner

    • Plan ahead to have fresh ingredients in your fridge for a simple green salad. Save yourself a step at the end of a long work week and chop vegetables the day before. Cook pasta, like vermicelli or rigatoni, topping with marinara sauce and add a side of garlic bread. In less than 20 minutes, a Friday night Italian dinner is ready. Any leftovers can be used for next week's lunch.

    Saturday Lunch

    • The Food Network has a recipe for an easy California Wrap Sandwich that takes 10 minutes to prep and yields four servings. The recipe calls fresh ingredients like tomatoes, lettuce, avocado, turkey and bacon, wrapped in a tortilla and topped with ranch dressing. If you're watching your carbohydrates, combine these same ingredients, minus the tortilla, with a hard-boiled egg for a delicious Cobb Salad.

    Saturday Dinner

    • Whether cooking for a group or just one, Chef Thomas Keller has a roasted chicken recipe as a practical choice for a weekend meal. Prepping a whole chicken and roasting for an hour is simple and goes a long way. Side dishes like garlic mashed potatoes or green beans make this a full meal. If there are leftovers, chicken will be available for sandwiches, or mix with mayonnaise for chicken salad.

    Sunday Brunch

    • According to The Washington Post, brunch is becoming increasingly popular for many weekend warriors. Traditional brunch fare such as Eggs Benedict, frittata or french toast are perfect for a Sunday midmorning get-together. Prep a a side dish such as fruit salad made with fresh ingredients from a local farmer's market and top with yogurt and granola to round out a lazy Sunday morning.
