Types of Pie With Whole Cookie Crusts
A cookie crust can be a welcomed surprise to a cheesecake or fruit pie. Sugar, butter and chocolate chip cookie are a few alternatives to a traditional pie crust. Any cookie recipe can be adapted for a pie crust. Use pre-made cookie dough or a recipe. Press the dough into the pie dish and bake. The pie crust will be ready for any filling. Fruit Pie and Sugar Cookie Crust

Soften about 3/4 tbsp. of butter in a bowl. Add 1/4 c. of sugar and an egg yolk. Mix well with hands and press into a pie dish. Bake the crust for 10 minutes at 400 degrees Fahrenheit. Allow the pie crust to cool. In a saucepan, combine 1/2 cup of sugar, 3 tbsp. cornstarch and 1/8 tsp. of salt. Add 1 1/3 cup of apple juice. Bring the ingredients to a boil for one minute. Stir well. Remove the saucepan from the heat and stir in 1/4 cup lemon juice and 1 tsp. lemon rind. Allow the mixture to cool. Mix in 6 cups of your favorite fruit. Pour into the pie crust. Allow the pie to cool for four to five hours or until firm.
Chocolate Cookie and Cream Pie

Combine 1 cup of crushed chocolate sandwich cookies and 3 tbsp. softened butter. Mix well and press into the pie dish. Mix together 1 1/2 cups of half and half, one package instant pie filling and one package vanilla pudding. Add 1 cup of broken chocolate sandwich cookies and 1 1/2 cups of whipped cream. Fill the pie dish with the filling. Refrigerate overnight.

Cheesecake and Butter Cookie Crust

Change up your cheesecake recipe with a butter-cookie crust. Preheat the oven to 375 degrees Fahrenheit. Combine 1 1/2 cups of crumbled vanilla wafers, 1/4 cup sugar, 6 tbsp. melted butter and 1/2 tsp. cinnamon in a mixing bowl. Mix well and press into a pie dish. Bake the crust for seven minutes. Allow it to cool before adding the filling.
Chocolate Chip Cookie Crust with Peanut Butter Filling

Preheat the oven to 350 degrees Fahrenheit. In a mixing bowl, combine 1 cup of peanut butter, 3 cups of powdered sugar, 2 tbsp. melted butter and 1/4 cup of water. Cover a pie crust entirely with pre-made chocolate chip cookie dough. Bake the crust 14 to 18 minutes. Allow the crust to cool. Pour the filling evenly over the crust. Melt a cup of chocolate chips and drizzle over the filling. You can cover the pie with pecan halves.
