Most people on planet Earth have heard of the common animal and hero mascots. For the organizations that seek out a mascot that makes a unusual statement, something run-of-the-mill just won't do. Consider your organization and your target audience. Decide if you want the mascot to have a sense of humor or to be serious. Choose a mascot that won't offend any race or ethnicity and one that won't frighten young children.
